Apple Ring Mug Cake

I went apple picking this past weekend, which was so fun, and now I am enjoying baking many different recipes with the apples I picked!


I sliced the top off my apple and decided to add the apple ring to a mug cake for something fun and a little fancy-looking! I used my basic mug cake recipe (found in this post), then added in blackberries, the rest of the apple (chopped up), and put the apple slice on top.



Here’s how to make this:

  1. Slice the top off an apple, and finely chop the rest.

  2. In a microwaveable mug, mix together 4 tbsp flour (I used whole wheat but all-purpose or oat work too), 3 tbsp milk of choice, 1 tbsp maple syrup, 1 tbsp olive oil, 1 tsp vanilla, and a good shake of cinnamon.

  3. Mix in ½ tsp of baking powder until evenly combined, then mix in a handful of blackberries and the chopped apple pieces.

  4. Add the mixture to your mug and add the apple slice on top.

  5. Microwave for 90 seconds, let cool, and enjoy!



I then made a little flower shape with some sunflower seed butter just to have some more fun decorating my mug cake, and added pumpkin chia pudding in the middle (recipe here - you can omit the peanut butter if you wish).


I enjoyed this on my balcony on a warm fall day that felt like summer!
