Berry Beet Pancakes

What better way to celebrate reaching 1000 followers on Instagram than with pink pancakes?


I wanted to make something pink because October is National Breast Cancer Awareness Month. It’s especially meaningful to me because my mom and aunt and many of my friend’s parents are breast cancer survivors.



Here’s my recipe for these pink pancakes:


Ingredients

2 whole eggs

2 egg whites

1 medium ripe banana

1 cooked beet

Raspberries and strawberries (about ¾ cup total) to taste or until the batter is pink enough

1 cup oats

2 tsp vanilla

1 tsp baking powder

½ tsp cinnamon

¼ tsp salt

Optional additional spices:

½ tsp ginger

¼ tsp cardamom

½ tsp allspice


Steps

  1. Use a blender or food processor to blend the ingredients together.

  2. Spray a pan with cooking oil, heat, and add spoonfuls of batter to cook the pancakes!

  3. Let cool, top with berries, and enjoy!

  4. For the shaped pancakes: I poured the batter in a line to make the “1” pancake. To make the zeroes, I poured the batter in an oval and then used my spatula to make a hole in the middle as the pancake cooked. I also made normal pancakes and used star-shaped cookie cutters to make pancake stars!
