Dairy-Free Cheesecake Bars

I made some cheesecake bars using RX Bars as the crust for a great afternoon snack! The berry cheesecake batter was one I had saved in my freezer from a past vegan cheesecake recipe, and then I made a batch of plain vegan cashew cheesecake so I could mix and match bar and cheesecake flavors! I used the chocolate sea salt and the PB&J bar flavors, because both can go with either berry or plain cheesecake! Thanks RX Bar for sending me the bars and nut butters to experiment with!



You could also use another type of snack bar for the base, or make your own crust as in my previous cheesecake recipe. I filled a baking pan with them, so the number of bars you use depends on: size of bar, size of pan, and how thick you spread the cheesecake batter.


Here’s my recipe:


Ingredients


About 8 RX bars (or other snack bar)


Cheesecake batter base:

1 cup raw cashews

¼ cup coconut cream

1 tbsp coconut oil

¼ tsp vanilla extract

Few dashes of cinnamon

Sprinkle of shredded coconut

Honey or maple syrup to sweeten (to taste, optional)

Additional flavors of choice (optional)


Steps

  1. Add raw cashews to boiling water and let soak for at least 10 minutes. During this time, cut some RX bars in half and arrange next to each other to cover the bottom of a baking pan.

  2. Add the rest of the filling ingredients to a blender or food processor. Once the cashews are done soaking, strain them and add to the blender and blend this mixture until it is even and smooth. It will be slightly grainy but that’s okay!

  3. If you want to make multiple flavors, separate the batter into two batches. To make the strawberry raspberry batter that I used, I added some beet chips for color, about 5 chopped strawberries, a few raspberries, and a sprinkle of cinnamon and more vanilla to taste. Blend the additional flavors with the batter until smooth.

  4. Make sure the bar pieces are arranged neatly in your pan so the edges touch, as if they were bars you made and sliced. Keep track of which bar flavors are where, or use a separate pan, so you can make sure the cheesecake topping flavors will complement the bars.

  5. Spread the batter on the RX bars. Put the cheesecakes in the freezer for an hour, then remove. Let thaw slightly so the bars are not solid to eat, then drizzle with RX Bar nut butters and enjoy!
