For breakfast today, I had a chocolate avocado chia seed pudding! I prepared it last night so I could have extra time to sleep in today, knowing my breakfast was ready for me! I love chia puddings because they are tasty and versatile and very nutritious, and adding avocado is a sneaky way to eat more vegetables and made it even creamier! This is a great vegan and gluten free breakfast or snack option.
Here’s how to make it:
½ mashed avocado
⅓-½ cup chia seeds
1 cup milk or plain yogurt (not Greek - the chia seeds need to absorb liquid and Greek is too thick)
2 tbsp cocoa powder
About 1.5 tsp vanilla extract
Dash of cinnamon
Drizzle of honey
1-2 tbsp shredded coconut (optional)
1-2 tbsp cacao nibs (optional)
In a jar, mix all ingredients.
Mix well and set in the fridge overnight. It's that easy!
In the morning you will have a delicious breakfast! I topped mine with peanut butter, more coconut and cacao nibs, and some chocolate chips and fruit. I also ate a slice of toast and a soft boiled egg to complete my breakfast and fuel me for the day!
