Chocolate Chia Pudding Breakfast Sandwich

Happy Toast Tuesday!!

It is the first day of class of my senior year of college today! I made chocolate chia seed pudding last night to eat for breakfast, but woke up craving toast, so I added the pudding to my toast to make a breakfast sandwich and it was a great decision!!




3 tbsp chia seeds

1 cup milk

Cocoa powder (about 2 tbsp) to taste

Splash of vanilla

Dash of cinnamon

Dash of salt


Mix ingredients well in a jar. Cover and refrigerate overnight and in the morning, the chia seeds will have thickened and you’ll have pudding!


I toasted two slices of Trader Joe’s sprouted 7-grain bread and spread one half with crunchy peanut butter and the other with my chocolate chia seed pudding. I added strawberry slices, blueberries, banana slices, raspberries, and blackberries and a good dash of cinnamon.
