Egg-Stuffed Pepper Rings

"If you like it then you should have put a (pepper) ring on it" - Beyonce, probably, if she made this recipe


I definitely like eggs if you couldn’t tell, so putting them in rings was only logical! And so easy!



Instructions:

1. Slice the top off of bell peppers and remove the seeds. Then slice them into rings.

2. Heat some olive oil in a pan on the stovetop over medium heat. Add a pepper ring and cook for about 2 minutes on each side, then crack an egg inside and sprinkle salt and pepper on top.

3. Cover the dish while the egg cooks so the top of the egg gets evenly cooked.

4. Repeat with the rest of the rings!


We made mint chocolate smoothies for a refreshing drink to accompany the pepper rings. To make these, we blended frozen bananas, cocoa powder, mint leaves, milk, and some of a grated dark chocolate bar. We made it to taste and added things experimentally, but it was really good, so I will make this again sometime so I can determine the exact measurements to share with you in the future!


Also, aren't these glasses fun? My mom get a set of them including pessimist (but I don't like to use that one haha) and realist as well.
