Lemon “Cake” Smoothie

When life gives you lemons, make a delicious smoothie! This smoothie is super easy to make, and somehow tastes like a lemon pound cake! It is made with simple ingredients, and tastes so bright and fresh. This has to be one of the best smoothies I have ever made!


Notes: For the lemon zest, if your blender is strong enough and you don’t want to spend time zesting your lemon, just cut off a small piece of the end of the lemon that is mostly peel and add that to your blender instead! I tried both the zest and adding the lemon peel chunk and both worked great.


You can leave out the turmeric if you don’t have it, but it adds fun color and health benefits. I actually thought this was sweet enough without adding maple syrup/honey, but it would depend on how ripe your banana is and your personal preference, so you can taste-test as you are blending and add more to sweeten until it tastes sweet enough to you!

 

Here’s how to make it:

Ingredients:

(serves 1)


1 ripe banana

1 cup milk of choice

¼ cup frozen pineapple

2 tbsp cashew or almond butter

1 tbsp lemon zest

2 tsp lemon juice

2 tbsp coconut flakes

1 tsp turmeric

Dash of cinnamon

1 tsp vanilla

½ tsp almond extract

1-2 tbsp maple syrup or honey to sweeten as desired

Steps:

  1. Blend everything together, sprinkle some lemon zest on top for some ~fancy~ garnish if you wish, and enjoy!
