Matcha Zucchini Overnight Oats

Happy St. Patrick’s Day! This is definitely not how I imagined my first St. Patrick’s Day in Chicago - I was so excited to see the green river - but gotta be flexible and safe with all that is going on. So I had my own little celebration safely at home - I did a green face mask and enjoyed matcha zucchini overnight oats for breakfast - I made a little rainbow and pot of gold on top with frozen berries, sunflower seeds, and shredded coconut for the rainbow and sunflower butter and peanuts for the pot of gold! You don't taste the zucchini at all, and it's a great way to sneak in some veggies at breakfast.



Even though I am staying in because social distancing is very important, it has still been a good day so far - I started the morning with live virtual yoga, and then I had virtual medical school class for the rest of the morning. I hope you are all staying safely at home and finding time for self-care and de-stressing. Here is how to make the oats:


Ingredients

¼ cup cooked (I microwaved it for 3 minutes) grated zucchini

½ cup oats

¾ cup milk

1 packet Trader Joes’ matcha powder (1.5 g)

1-2 tbsp chia seeds (optional)

2 tsp vanilla extract

Dash cinnamon

1-2 tbsp honey or maple syrup (optional, to sweeten)

Steps

Mix together the ingredients.

Refrigerate overnight, then enjoy in the morning with some berries and other toppings of your choice!
