I wanted something quick and cozy for breakfast on this snowy day, so I made microwave banana bread French toast in a mug! I used the tahini banana bread I made a while ago (recipe here), and it added so much flavor! The same idea would work for regular bread too. I love sharing microwave recipes because I know many of you are college students without kitchens, and it’s great to know you can still make fun food with just a microwave!
Here’s how to make it:
Ingredients
1-2 slices bread
Batter:
1 egg
3 tbsp milk
Splash of vanilla
Dash of cinnamon
Dash of nutmeg (optional)
Steps
Whisk together the batter ingredients and pour into a dish.
Cut a slice or two of bread into squares or strips and soak in this mixture. The longer you let it soak, the more flavorful your French toast will be!
Add the whole mixture to a microwave safe mug or dish and microwave for 1 minute. Microwave for a second minute, stopping every 10-15 seconds to check that your mug doesn’t overflow. It should be fully cooked after 2 minutes, but if not, try another 10-15 seconds because microwaves can be different.
Let it cool, add toppings - I did blueberries, chocolate chips, pecans, and shredded coconut - and enjoy!
