Microwave Peanut Butter Banana Cookies

A great healthy dessert or snack for college kids without kitchens!


These have been a staple of my college "cuisine" since my sophomore year. My roommate Angel and I made these all the time because we didn’t have a kitchen so we were limited in our cooking! All you need is a microwave, granola, nut butter, and 1-2 bananas depending on how many cookies you want!



Ingredients

1-2 ripe bananas

About ⅓ cup nut butter (or more for more flavor)

About 1 cup oats

Optional add ins: Chocolate chips, shredded coconut, nuts.


Steps

1. Mash the banana(s), then mix in nut butter and granola until the batter looks and feels like an oatmeal cookie dough. Fold in chocolate chips or other add ins.

2. Roll the dough into tablespoon sized balls, place on a plate or napkin.



3. Microwave the cookies for 2-3 minutes! They will be slightly soft but you don't want them to dry out. They will solidify as they cool.


4. Drizzle more nut butter on top and add other toppings! I also sprinkled some sunflower seeds on top for extra crunch.


There you have it - super easy, healthy, and tasty!!
