Pea Pesto Toast

Here’s a new kind of green toast for breakfast - pea pesto toast! Super easy and quick to make, without the challenges of needing your toast topping to be perfectly ripe (looking at you, avocados). I feel like peas often get forgotten about, but they have so much potential and are not just for baby food! Peas pair great with pesto for this toast.


I used the vegan kale cashew pesto from Trader Joe’s, which is delicious. I used microwaveable frozen peas from Target, because they are super fast and convenient. You can add any toppings you like on the pea pesto base! Try it and see what you think!

 

Ingredients:

1-2 slices of bread

¼ cup cooked peas

1 tbsp pesto

½ tsp lemon juice (optional)

Pepper, garlic


Steps:

1. Mash the peas, pesto, and lemon juice together in a bowl with a fork.

2. Add pepper and garlic to taste.

3. Toast your bread, and spread it with the pesto mixture.

4. Add toppings - I used tomatoes and tofu, and drizzled with tahini - and enjoy!
