Peanut Beet-er Cup Valentine’s Day Cookies

Happy Valentine’s Day!! What better way to celebrate than with some tasty pink, heart-shaped cookies with a melted chocolate peanut butter cup? These cookies will make your heart ~beet~ happier because this recipe is made with beets to add pink color and vegetable nutrients! Bake a batch and share with a loved one!



The chocolate peanut butter cups are from Whims Delights and are plant-based (made with oat milk), gluten-free, and have only 1g of sugar but still taste delicious and sweet without any sugar alcohols. They make the perfect topping for these cookies! Scroll down for the recipe to whip up some V-day treats!


You could use sunflower seed butter to make the cookies nut-free, and of course, then use nut-free chocolate on top. To make the cookies gluten-free, you can use oat or gluten-free all-purpose flour.

 

Ingredients (makes 8-10 cookies)

Wet:

¼ cup milk

2 tbsp maple syrup (you can add 1-2 tbsp more to taste if needed)

2 vanilla extract

Splash of vinegar (apple cider or white)

2 cooked beets, blended

5 tbsp creamy peanut butter


Dry:

1 ½ cup oat or whole wheat flour

2 tsp baking powder

Dash of salt


Add-in: chocolate peanut butter cups (one per cookie)


Before baking

Steps:

  1. Preheat oven to 350 F and line a baking sheet with parchment paper.

  2. Whisk dry ingredients together.

  3. Add wet ingredients to a blender, adding the almond butter last. Blend together until no chunks of beet remain and you have a smooth mixture.

  4. Pour the wet ingredients into dry, then mix together until a dough forms. The dough may be slightly sticky, but you should be able to knead and roll it out without it sticking significantly to your hands - if needed to make it less sticky, you can add 1-2 tbsp extra of flour.

  5. On a flat surface, roll out the dough and then use a cookie cutter to cut heart shapes (or a knife if you don’t have a cookie cutter). Make sure they are large enough to have space around the chocolate peanut butter cup.

  6. Place the cookies on the lined baking sheet, about 1-2 inches apart, and press a chocolate peanut butter cup into the center of each cookie.

  7. Bake at 350 F for 10 minutes, let cool, and enjoy with a loved one!
