Personal Microwave Blueberry Banana Bread

I got a new mug shaped like an elephant, so I needed to make a recipe worthy of its cuteness! So here is a recipe for personal microwave blueberry banana bread! It’s so tasty as well as quick.


I used this fun teapot spoon for even more cuteness! I love mini silverware!

Microwave mug baking recipes are so great because even college students in dorms without a kitchen can make them, since all you need is a microwave. I used to love experimenting with microwave baking before I had a kitchen, and it always made me feel so accomplished and adult-y when I succeeded! It’s much more fun to use your microwave for baking rather than just heating up old food, in my opinion. Even though I have a full kitchen now, I still love making mug cakes in my microwave because they are so quick. I like to prepare them the previous evening so when I wake up, I can just pop it in the microwave while I wash my face, and then let it cool and dig in.



Recipe


Ingredients

1 tbsp melted and cooled coconut oil or butter

1 egg

1 small ripe mashed banana

½ tsp baking powder

3 tbsp flour (I used almond but whole wheat or regular would work too in a similar amount)

1 tbsp coconut flour (you could also use oats - this is just to thicken the batter)

Dash of cinnamon

Splash of vanilla

3-4 tbsp blueberries

Handful of crushed walnuts (optional)


Steps

  1. Mix all ingredients together in a microwaveable mug.

  2. Microwave for 2-3 minutes, let cool, and enjoy!



I added more walnuts and some cinnamon on top. It also tastes great with some Greek yogurt.
