Pumpkin Apple Oats with Banana Ghosts

Halloween may have come and gone, but it seems like there are some ghosts still hanging around! I made some spooky pumpkin apple oats this morning and cut a banana into ghost shapes (with chocolate eyes) because I’m still in the Halloween spirit! I was excited because I discovered pumpkin apple sauce at Whole Foods and thought it would be a good addition to oats. I added raspberries, pecans, and some pumpkin chia seed pudding that I had made earlier this week on top.

You could also use regular apple sauce to make these. These are a great quick breakfast and it is vegan and gluten free (if you use gluten free oats) as well. You can also mix these ingredients together, add it to a jar, and refrigerate overnight to make these as overnight oats.

  1. Mix all ingredients together in a pot on the stovetop.

  2. Heat with frequent stirring until the oats have absorbed the liquid and are thickened.

  3. Let cool, add fruit, nuts, and pumpkin chia pudding!
