Raspberry Coconut Pancakes

Back in Boston and back to barre-ing and brunch-ing! I went to barre class today for the first time in over a week, and had a great workout! I also made raspberry coconut pancakes for a beach picnic with my friend Luke today to enjoy the nice weather in Boston! (This picture was pre-picnic obviously).



They were really an experiment and I just kind of eyeballed the amounts, but here’s the approximate recipe! I’ll try to work on perfecting the actual measurements, but figured I’d share it now in case anyone wants to try it!


Ingredients

2 mashed bananas

4 eggs

Dash of cinnamon

Splash of vanilla extract

Dash of nutmeg

2 tbsp Siggi’s raspberry yogurt

Handful of raspberries

About 1.5 tsp baking powder

Handful of shredded coconut

2-3 tbsp coconut flour to thicken the batter (you could use other flour types, but would probably need to add more)


Steps

  1. Mash 2 bananas and whisk with the eggs. Mix in the rest of the ingredients.

  2. Spray a pan with cooking oil, heat, and add spoonfuls of batter to cook the pancakes.

  3. Enjoy with more raspberry yogurt, more cinnamon and coconut, and some hazelnuts!

They taste great on the beach for a picnic as we did, but would be delicious anywhere!
