Roasted carrots are one of my favorite veggie dishes to make! They are quite simple and flavorful!
To roast the carrots, clean them and lay them on a baking sheet and drizzle some avocado or olive oil on top and sprinkle salt and pepper on them. I also like to add various seasoning combinations such as dried mint and harissa (probably my favorite!), or turmeric and Trader Joe's Everything But The Bagel (EBTB) seasoning.
Cook for 20 minutes at 400 F on each side. They will be soft and slightly blackened when done!
I served this batch of roasted carrots with mixed greens, Trader Joe's steamed lentils (warmed up and seasoned with pepper and oregano), mixed veggies, Trader Joe's salmon burger seasoned with pepper and basil, and asparagus sautéed in olive oil with garlic. I drizzled some of my homemade yogurt on top because yogurt makes everything better in my opinion!!
