Waffle Egg Sandwich

Happy Waffle Wednesday! This “waffle” is a little different - I cooked an egg in the waffle maker and made a breakfast sandwich with it! I was a bit nervous to see how it would work out, but it was super easy! Just shows it’s always good to try new things and take a chance - you could learn a waffle lot!

Steps

  1. Spray the waffle iron with olive/cooking oil. Turn the iron on and once heated, crack an egg in the middle and cook it for a few minutes until it is fully cooked.

  2. Remove from waffle maker and repeat with another egg.

  3. Add your sandwich fillings to the waffles and make your egg sandwich!

You could also scramble the egg before cooking, but I personally like having the variety of the mixture of the yolk and white. If you have a large/regular-sized waffle maker, you may need more than one egg per waffle by the way. And you could add seasoning to the egg before cooking, but I didn’t because waffle irons are tricky to clean and I didn’t want any residual salt or pepper to make its way into some sweet waffles later on!

I filled my sandwich with mixed greens, peppers, asparagus, sun dried tomatoes, and roasted acorn squash and seeds I made last night. I sprinkled Everything But The Bagel seasoning and paprika on top. The seeds added a nice crunch!


After taking the picture, I added avocado slices to the sandwich, but since it was such a perfect avocado I thought it deserved to be appreciated as a whole in the photo.
