One of the easiest snacks or desserts to make is stuffed dates - you just slice dates in half and add nut or seed butter, and can also drizzle them with chocolate! I have made these with tahini before, and they were delicious. One of my other favorite dried fruits are figs, so I decided to make a fall version of stuffed dates and also stuff figs as well. So, I created these pumpkin almond butter stuffed dates and figs! I brought these to class with me and they were devoured very quickly by my friends. They said these tasted so good and couldn’t believe how easy they are to make!
The best dried figs I have found are Trader Joe’s Dried Turkish Figs! I have tried other brands and types of dried figs, but these are by far my favorite! They have such a great consistency and flavor. Occasionally there are a few figs that are too dry, so if you cut it open and it is completely dry, I wouldn’t recommend eating it. I also got my medjool dates at Trader Joe’s - you want the dates to be fresh and juicy and sticky for the best texture and flavor.
Ingredients
Makes 10
2 tbsp pumpkin puree
2 tbsp almond butter (or seed butter if nut free)
Dash of pumpkin pie spice
Splash of vanilla extract
Pinch of salt
10 medjool dates and/or dried figs
Dark chocolate (optional)
Steps
Mix the filling ingredients together until smooth.
Melt chocolate - I microwave it and stir it about every 10-15 seconds until it is fully melted.
Slice one side of the dates and figs open, and remove the pits of the dates. Don’t cut all the way through because you want the fruit to hold the filling like a little bowl.
Fill the opening with a spoonful of the pumpkin almond butter mixture..
Drizzle the stuffed dates and figs with chocolate and refrigerate to solidify the chocolate. Enjoy as a snack or dessert!
