Coconut Cashew Banana Bread Baked Oats

Cozy mornings start with coconut cashew banana bread baked oats. It’s a long name for a recipe that is quick to make, and even quicker to eat because you won’t be able to resist digging in!



Ingredients

1 banana

½ cup oats

½ cup milk

1 tsp baking powder

About ¼ cup shredded coconut

2 tbsp cashew butter

Dash of cinnamon

Splash of vanilla


Steps

  1. Preheat oven to 350 F. Mash ¾ of the banana (save the rest to slice and put on top), and mix with oats, milk, baking powder, shredded coconut, cashew butter, and cinnamon and vanilla in a bowl.

  2. Lightly grease an oven safe dish and add the batter. Place banana slices, cashews, and coconut on top and sprinkle with cinnamon.

  3. Bake for about 25-30 minutes or until a fork/toothpick in the middle comes out clean. Add another spoonful of cashew butter, let cool, and enjoy!

As you can see I went a bit overboard on the cashew butter, but there’s no such thing as too much nut butter in my opinion!
