Mango Strawberry Coconut Baked Oats

I am enjoying some tropical fruit for a lovely summer breakfast with this bowl of mango strawberry coconut baked oats! I used Pillar’s Yogurt drinkable mango yogurt for extra mango flavor - yum! You could use any milk of choice as an alternative, but if you are a huge mango fan, try using this yogurt - you will be very glad you did!



 

To make the baked oats:

Makes 1 serving

Ingredients

½ cup oats

½ cup mango Pillar’s yogurt (or milk of choice)

½ mashed ripe banana

½ cup chopped mango

1 tbsp coconut flour

1 tsp baking powder

Handful of chopped strawberries

Handful of shredded coconut

Dash of cinnamon

Splash of vanilla


Steps

  1. Preheat the oven to 350 F.

  2. Mix all ingredients together in a bowl.

  3. Lightly oil an oven-safe dish with coconut oil and pour the mixture into it.

  4. To make it more decorative, you can add strawberries, mango slices, and more coconut on top.

  5. Bake for 25-30 minutes - the top should be golden brown.

  6. Let cool and then enjoy!
