I am savoring the summer flavors of peaches while I can!
This morning I made peach, fig, and walnut baked oats - what a great way to start the day!
I prepared this dish the night before so it would be ready to pop in the oven in the morning. While it was baking I did some stretches, which was very relaxing. I love starting the day with stretches while I look out my window at the river - it is so peaceful and helps me focus and be grounded and mindful.
Here’s the recipe:
Ingredients
1/2 cup oats
1/2 mashed banana
1/2 cup milk and/or yogurt (I used a mix of the two)
chopped figs and peaches (about 1/4 cup total)
crushed walnuts (about ¼ cup)
1 tsp baking powder
Dash of cinnamon
Dash of nutmeg
Splash of vanilla
Steps
Preheat oven to 350 F. Lightly spray or oil an oven safe dish.
Mix all ingredients together in a bowl. Pour into the oven safe dish and bake for about 25 minutes.
Let cool and enjoy!
I made a little divot in the center of my oats before baking and filled it with Greek yogurt afterwards! I sprinkled chia seeds and cinnamon on top along with a drizzle of honey! My family actually keeps bees, so this honey is from our bees and is a great reminder of home while I am away at school!
