Strawberry Peanut Butter Chocolate Baked Oats

Berry good baked oats!




I went strawberry picking and it was so fun and summery! And tasty too, because of course you have to try some berries while you’re picking.



My friends Jayna and Sofie and I later enjoyed our delicious fresh organic strawberries while cooling off by the lake because it was 95 degrees out!

What do you do when you have lots of fresh strawberries? Make STRAWBERRY PEANUT BUTTER CHOCOLATE BAKED OATS for your family of course!!!


I love baked oats, and my favorite flavor to make is peanut butter baked oats, and this time I added chopped strawberries and vegan dark chocolate chips. I topped them with strawberries, banana slices, cinnamon, chocolate, peanut butter, and cashews and almonds - can you tell I had fun decorating? I tried to make them each a different little edible art piece!

These are a super tasty breakfast - or lunch or dinner, because I think brunch works all the time! They are also vegan and gluten free if you use almond milk, vegan chocolate, and gluten free oats like I did because my sister is gluten free. I used Crazy Richard's (my fave PB brand - their only ingredient is peanuts and it's so tasty!) crunchy peanut butter for the batter for a nice crunchy texture, but used their creamy peanut butter to drizzle on top! .

 

Ingredients (makes one serving) 1/2 cup oats 1/2 cup milk (I used chocolate almond milk) 1/2 mashed banana 1 tsp baking powder Chopped strawberries Chocolate chips 2 hearty spoonfuls of peanut butter (1 to be mixed in, 1 for the middle) plus some for drizzling

Cinnamon, nutmeg, allspice and vanilla to taste (I just did a dash of each, plus extra cinnamon on top) Extra strawberries, banana slices, chocolate, and nuts for toppings!

Steps

1. Preheat oven to 400 F.

2. Mix everything besides toppings, and 1 scoop of peanut butter.

3. Pour half the mixture into an oven safe bowl. Add the scoop of peanut butter, then the rest of the batter.

4. Add toppings and bake for about 20 minutes! The top will be crispy and the inside warm and gooey - it’s heaven!

5. Let cool, drizzle with creamy peanut butter, and enjoy!
