Orange Cream Baked Oats

Orange Cream baked oats - the second part of my orange-themed day!

These baked oats are so tangy, creamy, and delicious! I prepared them last night so they were ready to go for a quick and filling lunch before my 7 hour move in shift for work as an RA. It’s going to be a long day, but starting it with barre class and these baked oats means it’s off to a good start and I have energy and positivity to keep me going!


On my way walking home from barre class, I passed by so many of these pretty purple wildflowers along the river so I brought some home and decorated!

Recipe:


Ingredients

½ cup rolled oats

1/2 mashed banana

¼ cup chopped fresh orange slices

½ cup milk (I used coconut milk)

1-2 tbsp yogurt

½ tsp cinnamon

Dash of turmeric (optional)

1 tsp baking powder

1/2 tsp baking soda

Splash of vanilla extract

About 1 tsp of chia seeds.


Steps

  1. Lightly oil an oven safe bowl and preheat oven to 350 F.

  2. Mix all the ingredients and pour into the bowl. I also added the juice that came out while slicing the oranges!

  3. I put two orange slices on top before baking and saved a few more to add after.

  4. Bake the oats for about 25 minutes until the top is golden brown.

  5. Let cool, and add yogurt, orange slices, cinnamon, and chia seeds! Enjoy!
